Easy Skillet Chicken Cordon Bleu with Yellow Rice
Ingredients
• 2 lbs @labellepatrimoine thin-sliced chicken
• 1 cup all-purpose flour
• @pawpaflavor Bearly Legal SPG
• 2 tbsp butter
• 1–2 tbsp Dijon mustard
• 1 cup chicken stock
• Sliced ham
• Sliced Swiss cheese
• Yellow rice, prepared according to package directions
Directions
1. Season the chicken generously with Pawpa Bearly Legal SPG.
2. Dredge the chicken in flour, shaking off the excess.
3. Melt the butter in a large skillet over medium-high heat and cook the chicken until golden brown on both sides. Remove from the skillet.
4. Whisk the Dijon mustard into the pan, then add the chicken stock and scrape up all the flavorful browned bits.
5. Return the chicken to the skillet and let it simmer for 5 minutes.
6. Top each piece of chicken with a slice of ham and a slice of Swiss cheese. Cover the skillet for 2–3 minutes, until the cheese is melted.
7. Serve over hot yellow rice and spoon the Dijon pan sauce over the top.
